Healthy Cauliflower

Ingredients :

  • Cauliflower florets - 500 gms

  • Onion, small - 1

  • Ginger - 1 inch piece

  • Green chili - 1

  • Tomato - 1

  • Oil - 1 tbsp

  • Cumin seeds - 1 tsp

  • Cinnamon - 1 stick

  • Garam masala - 1 tsp

  • Turmeric powder - ˝ tsp

  • Carrot (grated) - 1 tbsp

  • Green peas - 2 tbsp

  • Salt to taste

  • Sugar - 1 tsp

  • Water - 2 tbsp

  • Ghee - 1 tsp

  • Coriander leaves - 1 tbsp

  • Bay leaf - 1

Method :

  • Cut the cauliflower into big florets.

  • Parboil it. Grind onion, ginger, green chili and tomato.

  • In a pan heat oil. Add cumin seeds, cinnamon, bay leaf and sauté till cumin seeds crackle.

  • Then add the grinded paste and garam masala.

  • Mix well and sauté till oil separates. Add turmeric, grated carrot, green peas and cauliflower.

  • Mix well. Add salt and sugar.

  • Mix well. Add water and cook for 2-3 minutes or until cooked.

  • Add ghee at the end.

  • Garnish with coriander leaves and serve hot with roti or paratha.

  • It goes well with plain rice and dal too.
