Mushroom Kasturi Methi

Ingredients :

  • Mushroom 500 gms

  • Onion, finely chopped - 1

  • Tomato, finely chopped - 1

  • Tomato ketchup (optional) 1 tsp

  • Garlic, finely chopped 2 cloves

  • Ginger, finely chopped tsp

  • Kasturi Methi 5 tsp

  • Salt to taste

  • Pepper, Red chili, Cumin seeds, - all to taste

Method :

  • Add 2 tbsp oil to the pan. Add the cumin seeds and let them crackle.

  • Add the cloves of garlic and ginger. Cook for a minute.

  • Add the onions. Add tomatoes. Add all the spices and some tomato ketchup,

  • Cook till brown. Add the mushrooms.

  • Add half a bowl of water. Cover with a lid.

  • Let it cook for about 10 minutes till mushrooms are cooked thoroughly.

  • Keep stirring in between. Once most of the water is dried, add the kasturi methi. Cook for another 2 minutes.

  • Serve hot garnished with fresh chopped coriander leaves.

Quick Corn Snack

Ingredients :

  • Corn Kernels, boiled and seeds separated (half a bowl per person)

  • Onion 1 finely chopped

  • Capsicum (green) 1 finely chopped

  • Tomato Ketchup to taste

  • Green Chili (optional) 1 finely chopped

  • Butter 2 tsp

  • Salt, Black Pepper, Red Chil Powder, Coriander powder - all to taste

Method :

  • Put butter, onion, capsicum and green chilies in a microwave safe dish and cook for 2 minutes.

  • Add the ketchup, corn and spices and cook for another 3 minutes.

  • Mix well and serve hot.

  • You can skip the onion, capsicum, ketchup and green chilies and keep it simple as well - Masala corn ready in a jiffy.
