Skin of bitter gourd (Add salt and mix well and then held tightly between 2 hands and squeeze extra water) - 200 gms
Wheat flour (coarsely grounded) - 4 cups
Handva flour/ khatta dhokla flour - 1 cup
Gram Flour - 1 cup
Oil - 3 tbsp + to deep fry
Salt - to taste
Red chili powder - 3 tsp
Turmeric powder - 1 tsp
Garam masala - 1 tsp
Chopped coriander leaves
Curd - 3 tbsp
Sugar - 3 tbsp
Soda bi-carb - 1/4 tsp
In a bowl take all the three flour and bittergourd skin.
Add 3 tbsp of oil and then add all spices, curd, sugar and mix well.
Then make small oval shaped muthiya (cutlets) and deep fry on medium flame till they turn brown.
Serve hot with curd or tomato sauce.
