Carrot Cake

Ingredients :

  • Brown or White sugar - 200 gms

  • Flour - 180 gms

  • Butter or Sunflower oil - 125 gms

  • Eggs - 2

  • Cinnamon - a little

  • Baking Powder - tsp

  • Bicarbonate - tsp

  • Carrots, grated - 2

  • Walnuts or almonds - 10

Method :

  • Pre-heat the oven at 180 C.

  • Mix the sugar, flour, cinnamon, baking power and bicarbonate, Add the oil or melted butter and when all the ingredients are well mixed, add the eggs (one by one) and mix well.

  • Put the mixture in the fridge for about 5 minutes. Then add the grated carrot and the nuts to the mixture.

  • Bake the cake for about 30 - 40 minutes.

  • Turn off the oven and leave the cake in the oven for another 15 minutes.
